Pancake brownies

We've been without an oven for a week and a half now.  For the most part we've been fine, but I'm starting to crave more and more foods that require an oven which I think is just because my brain knows it's not working.  Anyways, tonight is Izzy's turn to make dessert for FHE so we improvised on an oven dish.  The brownie batter made perfect pancakes (just top with Cool Whip).  The best part is they're only worth 1 Weight Watcher point a piece.  Found me a new favorite dessert.
P.S.  Landlord informed us on Friday that our special tiny oven (24" double wall oven) is on backorder so it might be another week or so.  Don't they know we've got company coming for Christmas???  We have biscuit recipes to perfect while our professional is in town.  And does anyone have any ideas for ovenless turkey or ham?  Do you think if I asked the oven company would reimburse us for the Honey Baked Ham we'll have to order?  Didn't think so.

Very creative with the brownie pancakes!

Now you've got me thinking about a ham or turkey in the crockpot. I bet you could get a couple turkey breasts and season them, and then put stuffing in there, with lots of moisture, of course, and put the turkey on top. Hmmm...I bet it would work! Maybe I'll try it sometime.
